In Hampshire, just over an hour from London, a Georgian house from the 1760s, set to follow the path of the sun, has been restored and woven back into 438 acres of woodland, meadow and lakes. Its rule: everything begins with the soil, and the table serves first what the estate grows.
“

The Home Farm, set up in the mid-19th century to feed the house, has taken that role back: Guernsey cows, a dairy opened in 2020, a 500-tree orchard, a certified biodynamic Market Garden and the only biodynamic tree nursery in the UK. Biomass boilers, a borehole and harvested rainwater close the loop. Marle restaurant holds a Green Michelin Star.

Six room types in the house and its corridors, plus two cottages in the grounds. For a group: the Assembly Room with movable walls opening onto the gardens, the Card Room for registration, a screening room, the long table of the Dining Room and the Glass House in the walled garden. Trains run from London Waterloo to Winchfield, then a fifteen-minute drive; the hotel arranges transfers.
