Dinner in the greenhouse

## Rosendals Trädgård

On the island of Djurgården in Stockholm, a foundation has farmed a biodynamic garden since 1982: vegetable fields, orchard, vines and roses. Bread comes out of a 16-tonne stone oven fired with birch, and meals are served in the greenhouses, among the plants.

In 1982 Lars Krantz and Pål Borg founded Stiftelsen Rosendals Trädgård on run-down greenhouses and a neglected garden, where Sweden trained its first gardeners from 1862 to 1911. The foundation has no shareholders and no subsidies: every krona of surplus goes back into the garden. Leftovers from the tables end up in its composter, the largest in the country.

For a team, the greenhouses can be booked privately: Vinbär, the largest, seats up to 150, Skavank up to 100, greenhouses two and three from 20 to 90. Äpple, an all-timber pavilion by In Praise of Shadows that began life at the 2018 Venice Architecture Biennale, seats 20 at the bottom of the orchard. Tram 7 runs from central Stockholm to Djurgården.
